Beer Batter
1 can of beer (ale is better but lager is fine)
Flour (one cup, or 120 grams)
3 teaspoons of baking powder
Salt and pepper to taste
Glug of olive oil
Mix the beer, flour and baking soda together in a large bowl, keep adding flour until the batter is as thick as wall paper paste.
Add salt and pepper to taste.
Mix in the olive oil, this just gives the batter when cooked a nice shinny texture.
Cover the fish in flour and dip in the batter, the batter should stick to the fish like wallpaper paste if it doesn’t add more flour until it does.
Cook for about ten minutes in hot oil until the batter is golden brown.
You can add chili flakes, garlic powder or paste, ginger for a different taste
You use the same batter for onion rings and chicken as well and just make sure the chicken is cooked all the way through by cutting a piece as a sample.
